Apple Cheesecake

38% calorie reduction from traditional recipe

Crust
1 1/2 cups graham cracker crumbs
1/4 cup unsalted butter, melted
2 tablespoons Equal? Spoonful*

Cheesecake
2 packages (8 ounces each) reduced fat cream cheese, softened
1 cup Equal? Spoonful**
1 2/3 cups unsweetened applesauce
2 whole eggs
2 egg whites
2 tablespoons lemon juice
2 tablespoons cornstarch
3/4 teaspoon ground cinnamon
1/2 teaspoon apple pie spice
1 teaspoon vanilla
1 cup reduced fat sour cream

*May substitute 3 packets Equal sweetener

**May substitute 24 packets Equal sweetener

For crust, combine graham cracker crumbs, melted butter and Equal?. Press onto bottom and 1-inch up side of a 9-inch springform pan. Bake in preheated 375 degree F oven 10 minutes. Remove from oven and cool on wire rack while preparing cheesecake.

For cheesecake, beat cream cheese and Equal in mixing bowl on medium speed of mixer until smooth and well combined. Mix in applesauce, eggs, egg whites and lemon juice until blended. Blend in cornstarch, cinnamon, apple pie spice and vanilla until combined. Fold in sour cream, just until combined.

Pour cheesecake mixture over baked crust. Bake in preheated oven 60 to 65 minutes or until center of cake is just set. Remove from oven and cool completely on wire rack. Refrigerate several hours or overnight before serving.

To serve, carefully run sharp knife around edge of cheesecake. Carefully remove side of pan. Cut into wedges and serve.

        Yield: 12 servings

        3/4 cup flaked coconut
        3 ounces cream cheese, at room temperature.
        2 tablespoons mayonnaise
        1 cup cooked chicken, chopped
        1 cup walnuts, chopped
        2 tablespoons minced onion
        1 tablespoon curry powder, to taste
        1/2 teaspoon salt

        Preheat oven to 350 degrees F.

        Spread out coconut on a small baking sheet and toast in oven until light brown, 10 to 15 minutes. Let cool slightly.

        In a small bowl, blend together cream cheese and mayonnaise until smooth. Add chicken, walnuts, onion, curry powder, and salt. Mix well.

        Form chicken mixture into 1-inch balls. Roll in toasted coconut to coat. Cover and refrigerate until chilled.

            1/2 Head chicory

            1/2 Bunch arugula

            1 sm Head radicchio

            1/4 c Bottled Italian style

            Salad dressing Wash and dry greens under cold running water. Remove and discard stems from all greens. Dry greens well. Place radicchio on serving platter.             2 lb Peaches

            1 tb Lemon juice

            1 1/2 tb Amaretto liqueur

            6 tb Half-and-half

            Grated nutmeg or cardamon This soup is a good use for overripe or damaged peaches. For a winter treat, make it with canned peaches. Drop the peaches into boiling water. Keep the water at a simmer for about half a minute. Remove the peaches, and let them cool. Then peel, pit, and slice them. Put the peaches with the rest of the ingredients into a blender.             Lemon Pepper Seafood Packets

            4 fillets (about 1 1/3 pounds) of sea bass or
                other firm, white-fleshed fish, such as
                orange roughy or true cod
            4 (12-inch square) sheets aluminum foil
            1/3 pound fresh shrimp
            2 tablespoons freshly squeezed lemon juice
            1/2 teaspoon freshly grated lemon rind
            1/2 teaspoon salt-free lemon pepper seasoning blend
            1/4 teaspoon paprika

            Place a fillet of fish on each sheet of foil. Shell the shrimp. If a shrimp is large, chop it into thumbnail-size pieces. Place in a small bowl and squeeze lemon juice over all. Add the lemon rind and seasoning blend and stir to blend. Divide the shrimp and place on top of the fish fillets. Sprinkle each with paprika.

            Fold the foil carefully to form packets that will not leak. Refrigerate until ready to cook.

            To cook, heat a barbecue grill to low. Cook for 15 minutes. Serve in the packets, if desired.

            NOTE: Packets can also be baked in a 375 degrees F oven for 15 minutes.

            2 md Onions — finely chopped

            1/2 lb Red Lentils

            6 c Beef Stock — or chicken

            Stock 1 t Paprika

            1 Bay Leaf

            1/2 ts Salt

            1/8 ts Pepper

            1 t Dried Mint

            1 t Dried Parsley

            In a large soup pot, saute oil and onions. When onions are soft, add lentils. Stir several minutes. Add remaining ingredients. Bring to a boil. Simmer until lentils are very soft, about 35 minutes. Soup may be pureed.

            I had this salad years ago in an Italian restaurant and have been looking for the recipe. Its simply delicious!

            12 servings

            Make at least 2 hours in advance to allow flavors to meld.

            8 slices bacon
            2 heads fresh broccoli, chopped
            1 1/2 cups sharp Cheddar cheese, shredded
            1/2 large red onion, chopped
            1/4 cup red wine vinegar
            2 tablespoons granulated sugar
            2 teaspoons ground black pepper
            1 teaspoon salt
            2/3 cup mayonnaise
            1 teaspoon fresh lemon juice

            Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.

            In a large bowl, combine broccoli, cheese, bacon and onion.

            Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice. Combine dressing with salad. Cover, and refrigerate until ready to serve.
