Hamburger Dump Soup

Hamburger Dump Soup

1 lb Hamburger

3 Bouillon beef cubes

1 cn Tomato sauce

3 qt Water

1/2 ts Salt

1 ts Pepper

1 Onion, chopped

1/2 ts Basil

1 ts Parsley flakes

1 cn Mushrooms, cut up

3 cn Mixed vegetables

1/2 lb Noodles of any kind

1 cn Tomatoes, cut up

Dump the water in a large pot. Bring to a boil; add bouillon cubes, tomato sauce, salt, pepper, parsley, onion and basil. Drop hamburger into pot in small pieces. Simmer for 10 minutes on medium heat. Add the vegetables, mushrooms, tomatoes and the noodles or rice. You can also use up the small bowls of vegetables leftover in your refrigerator. Add more water if necessary. Cook until the noodles are done. Randy Rigg

Tofu-Almond Cheesecake

1 (8-inch) graham cracker crust, unbaked
1 pound tofu
1/2 cup firmly packed brown sugar
1/2 cup almond meal
1/4 cup honey or syrup
1/4 cup oil
2 tablespoons lemon juice
1 teaspoon almond extract
Pinch of salt
1/4 cup almonds, slivered, toasted

Preheat oven to 350 degrees F.

Blend all ingredients except crust and almonds in a food processor until smooth and creamy. Pour into unbaked pie shell, top with slivered almonds, and bake for about 45 minutes or until cracks start to form on the edge of the filling.

2 tablespoons peanut oil
2 garlic cloves, minced
3 teaspoons chili powder
2 to 3 teaspoons ground dried red chile
1 teaspoon salt, or more, to taste
1 pound (3 cups) raw peanuts

Preheat oven to 350 degrees F.

In a heavy skillet, warm the oil over low heat. Add the garlic, and saut? it briefly until it has softened. Stir in the chili powder, chile and salt, and mix well. Sprinkle in the peanuts, and stir to coat them. Transfer the peanuts to a baking sheet. Bake them 10 minutes, or until they are lightly browned.

Transfer them to absorbent paper. Let them cool before serving. Stored in a closed jar, the peanuts will keep several weeks.

      Hot German Potato Salad

      2 pounds potatoes
      1 teaspoon salt
      1/8 teaspoon pepper
      1 teaspoon dry mustard
      1/2 teaspoon granulated sugar
      1/2 teaspoon flour
      1/2 cup water
      1/2 cup vinegar
      1/4 pound bacon or 2 tablespoons butter
      1 medium onion, cut fine

      Cook potatoes in boiling salted water until tender. drain, peel, and while hot, cut into 1/8-inch slices; sprinkle with the salt, pepper, mustard, sugar and flour.

      Heat water and vinegar to boiling point.

      Place bacon or beef, sliced and chopped fine, in skillet. Fry until light brown. Add onions. Brown slightly. Add potatoes and the hot vinegar; heat through to absorb the vinegar and water; serve warm.

      If butter is used, the bits of fried bacon may be omitted. If the salad is too dry, add a little hot water. It should have a glassy look without being lumpy or greasy.
