Spinach Salad with Honey Mustard Dressing

A favorite of Buzz & Vicki!

8 cups fresh spinach coarsely torn or baby spinach
5 egg yolks
1 tablespoon red wine vinegar
3/4 quart salad oil
1 lemon squeeze for juice
1 tablespoon boiling water
1/4 cup poppy seeds
1/2 cup Dijon mustard
1 cup yellow mustard
1/2 cup honey
1 teaspoon fresh tarragon chopped
1 lemon
1 dash red wine vinegar
1 dash salt to taste
1 dash black pepper to taste

Mayonnaise: Whip 5 egg yolks with 1 tablespoon red wine vinegar, and the juice of one lemon, until frothy. SLOWLY add the 3/4-quart salad oil and 1 tablespoon boiling water while constantly whipping the mixture.

Dressing: Take one quart of the mayonnaise you have made, and stir in the 2 types of mustard, 1/2 to 1 cup honey (adjust to your taste), tarragon, dash red wine vinegar, juice of one lemon, poppy seed, and salt/pepper to taste. Stir until thoroughly blended.

GARNISH WITH ANY OF THE BELOW:
Crumbled, cooked bacon
Crumbled hard boiled eggs
Sections of mandarin oranges
French fried onion bits
Toasted sunflower seeds
Toasted pumpkin seeds
Bean sprouts
Champagne grapes

Per serving: 896 Calories; 89g Fat (86% calories from fat); 6g Protein; 26g Carbohydrate; 133mg Cholesterol; 636mg Sodium

4 cups water
1 small smoked ham hock
1 cup split peas or lentils, soaked several hours
1/2 cup finely grated carrot
1/4 cup chopped celery
1/4 cup finely chopped onion
1 sprig parsley, cut fine
1 bay leaf
1/8 teaspoon thyme
Salt and pepper to taste

Combine all ingredients in pressure cooker; cook at 10 pounds for 45 minutes. Remove ham hock; skin and dice; add to soup.

Makes 6 servings.

It turns out just as nice prepared in a regular soup pot. Heres how: Saute the carrots, celery and onion until slightly softened. Add the water, split peas, ham hock, herbs and seasonings, cover partially and cook for about an hour on gentle simmer. Remove ham hock, skin and dice and return to pot.

Per serving: 140 calories; 2 g fat (0.5 g saturated fat; 13 percent calories from fat); 21 g carbohydrates; 8 mg cholesterol; 314 mg sodium; 11 g protein; 8.6 g fiber

These were/are my husbands and my favorite cakes growing up. When I saw this recipe years ago it became a regular treat.

Mix together:

4 eggs
1 teaspoon vanilla extract
1 cup granulated sugar
2 teaspoons oil

Add:

2 cups flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk

Peanut butter, smooth
12 ounces semisweet chocolate pieces
1 tablespoon oil

Beat first 4 ingredients. Add next 4 ingredients. Pour into a greased and floured sheet pan. Bake at 350 degrees F for 25 minutes.

Take out hot cake and immediately spread with peanut butter. Refrigerate until hard.

Melt chocolate with 1 tablespoon oil and spread over peanut butter and chill till hard. Cut into squares.

    Grilled Pork Roast

    1 (5 pound) boneless pork top loin roast, rolled and tied
    1 1/2 teaspoons salt
    1/2 teaspoon white pepper
    1/2 teaspoon sage
    1/2 cup cider vinegar
    1/4 cup salad oil
    1/3 cup honey
    1 teaspoon dry mustard

    Combine salt, pepper and sage and rub into roast. Insert spit through center of roast so that meat is well balanced. Slide holding forks into each end of the roast and tighten securely.

    Place drip pan over fire. Insert meat thermometer at an angle into thickest part of meat. Be sure end of thermometer does not touch fat or spit. Cook on rotisserie above low fire for 1 1/2 hours. Combine remaining ingredients. Brush meat with sauce every 15 minutes for an additional 1 hour or until meat thermometer registers 170 degrees F (about 2 1/2 hours total cooking time).

    Yields 10 - 12 servings.

    15 servings which should yield 4 ounces cooked pork per serving.

    Per serving: 227.6 Calories, 10.1g Fat, 0g Fiber

        Be sure to thoroughly chill this no-bake pie before attempting to slice it.

        Serves 6-8

        1 cup granulated sugar
        6 ounces butter
        6 ounces chocolate, bittersweet (unsweetened)
        4 eggs
        2 teaspoons vanilla extract
        1 tablespoon Kahl?a (optional)
        1 pie shell (9-inch), pre-baked
        Whipped cream

        Melt the chocolate in a bowl over simmering water. Set aside and allow to cool slightly. Using an electric mixer, cream together the butter and sugar until smooth. Add the chocolate, vanilla and Kahl?a (if used) and blend. With the mixer running, add 1 egg and beat for 5 minutes. Repeat with the remaining 3 eggs (mixing each for 5 minutes). Pre-bake the pie shell and allow to cool. Pour the mixture into the shell. Cover and chill in the refrigerator for at least 2 hours (overnight is best).

        Serve cold, topped with whipped cream.

          2 tablespoons Dijon mustard
          3 tablespoons red wine vinegar
          1 1/4 cups olive oil
          1 egg white
          1/4 cup chopped parsley
          1 tablespoon fresh lemon juice
          2 tablespoons dry red wine
          Salt and freshly-ground pepper,
              to taste

          Combine mustard and vinegar in a blender. Turn on blender at low speed and gradually ad 1/4 cup of the oil. Add egg white and continue mixing. Gradually add remaining oil while blending. Remove from blender and add parsley, lemon juice, red wine and seasonings.

            Dried Tomato Dressing

            4 Dried tomatoes, 4″ diameter

            Vinegar, red wine 1/2 c Olive oil

            1 ts Basil, dried

            1 ts Thyme, dried

            1/2 ts Rosemary, dried

            Start this 6-12 hours before you want to use it on a salad. Break the dried tomato into small pieces. Put in a ceramic bowl. Pour on just enough vinegar to barely cover the tomato pieces. Crumble the dried herbs over the tomato pieces. Mix them in a bit. Add the oil. Stir. Leave to marinate in the fridge, stirring occasionally until you are ready to dress the salad. We put this on a romaine lettuce salad. The salad also had anise slices, and orange pieces. I don think we put any onion in, but I was a bit tipsy on my friends homemade wine when I was putting together the salad so can remember what all went in it. It was a fairly simple green salad though. No celery or carrots or green peppers in it. This recipe for dressing got rave reviews from my friends and will be the recipe I include with the dried tomatoes I made for Christmas gifts this year. Created by Sandra P.             1 chicken, cut up, or 4 boneless chicken breasts, cut up
            1 can cream of mushroom soup
            1 can cream of chicken soup
            1 large onion, sliced
            1 can French onion soup
            Garlic, fresh or powdered, to taste
            1 package fresh mushrooms, sliced
            Poultry seasoning, to taste (optional)

            Add all ingredients to crockpot, cover and simmer on LOW for at least 5 to 6 hours and up to 8 or 9 hours. You can also add any vegetables you like.

            Serve over rice, potatoes (cooked any way you like), noodles or biscuits.
