Tarragon Chicken Salad Loaf

2 lb Chicken breasts *

1 lb Asparagus **

1/2 c Water

1 c Mayonnaise

2 tb Lemon juice

1 1/2 ts Tarragon; dried crushd

1/4 ts Salt

1/8 ts Pepper

1 Carrot; shredded

1 Red pepper; chopped

3 Green onions; minced

1 lb Egg Bread; oval loaf unslice

* Boned, skinned and split ** Cut diagnally in 1/2 inch pieces 1. In 13 x 9 x 2-inch microwave-safe baking dish, arrange chicken breasts with thicker portions toward outside. Cover with plastic wrap; turn back one corner to vent. Cook on HIGH 10 minutes, turning chicken over after 5 minutes. Let cool in dish. 2. In medium glass bowl, combine asparagus and water. Cover; vent. Cook on HIGH 3 minutes; drain. Rince with cold water; drain. Set aside. 3. In bowl, whisk mayonnaise with lemon juice, tarragon, salt and pepper until blended. Stir in asparagus, carrot, red pepper and onions. Cut chicken imto 1-inch pieces. Stir into mayonnaise mixture. 4. With serrated knife, cut off a thin slice from top of bread; remove inside (reserve for other use), leaving a 1/2-inch shell. Spoon salad into bread shell, mounding slightly. If desired, garnish with fresh tarragon. To serve, cut into wedges. Makes 8 to 10 servings… MW Tip: To dry fresh herbs in a quick, easy way, line a MW-safe plate w/2 paper towels, one on top of the other. Evenly spread 2 cups of clean, dry leaves or sprigs on towels. 2 tablespoons olive oil
6 cloves garlic, crushed
3 slices French bread, crusts removed
4 cups chicken broth
Salt and pepper, to taste

Saut? garlic cloves and bread in oil over medium heat until they are just browned (do not let them burn). Remove from heat. Remove the bread, cut into 1-inch squares, and return the cubes to the pan. Add chicken broth, bring to a boil, cover, and simmer for 20 minutes, or until the bread has disintegrated and mixed well into the broth. Add salt and pepper to taste.

          1 carrot

          1 package blackeyed peas — frozen

          1 onion

          3 stalks celery

          1 green bell pepper — or red

          2 tomatoes — or 1 can, chopped

          1 package frozen corn kernels

          1 package frozen okra

          vegetable oil bay leaves oregano basil allspice cayenne pepper salt black pepper

          Make vegetable stock by boiling at least one carrot, several bay leaves, and any leftover root vegetables for 45 mins in 6 cups of water. Add the black-eyed peas and simmer about 30 mins. Chop the onion, celery, and the bell pepper. Remove all the celery leaves from the top of the bunch, rinse well, and chop them too. Saute the onion in a little oil. Add the celery, with leaves, and after a few mins., the bell pepper. Sprinkle generous amounts of the spices in the pan, and saute another minute. Remove the carrot, vegetable pieces, and the bay leaves from the stock. Add the onion mixture and chopped tomatoes to the stock, and stir well, adding more water if necessary. Let simmer about 10 mins. Chop the okra and stir in with the frozen corn; simmer another 10 mins. Adjust the spices to taste, and serve, ideally with cornbread.

                1 lb in weight, or red ones

                3 Navel oranges

                Juice of 1/2 lemon 1 tb Olive oil

                1/4 ts Salt or to taste

                1 ts Powdered sugar

                2 tb Orange flower water,

                Optional Peel and grate the white radish or trim and thinly slice the red ones. Remove the orange peel, including white membrane, with a sharp knife and cut the fruit into 1-inch pieces, saving any juice. Gently mix the radishes, oranges, orange and lemon juice, olive oil, salt, sugar and orange flower water, if using.

                1/2 cup granulated sugar
                1 teaspoon salt
                1 teaspoon dry mustard
                1 tablespoon flour
                1/2 cup milk
                1 egg, beaten
                1/2 cup cider vinegar
                1/2 cup sour cream

                In a saucepan, combine sugar, salt, mustard and flour. Add milk and beaten egg. In a separate pan, heat the vinegar and gradually add to the mixture. Cook over low heat until dressing has thickened. Cool slightly and mix with sour cream.
