Borscht Energy Soup

1 md Beet

- scrubbed & cut into chunks 1 md Carrot; sliced

1 md Kirby cucumber

- cut into chunks 1 md Green bell pepper

- seeded & coarsely chopped 1 Lemon; peeled,

- halved, and seeds removed 1 Ripe avocado; peeled,

- stone removed & quartered 1/2 c Spinach leaves (packed)

1/2 c Alfalfa sprouts (packed)

1/2 c Chopped fresh dill

2 tb Bragg Liquid Aminos

1/8 ts Freshly ground black pepper

2 c Vegetable stock; -OR-

-Vegetable bouillon Alfalfa sprouts, for garnish In a food processor fitted with the metal blade, pulse the beet, carrot, cucumber, bell pepper, and lemon until finely chopped. Add the avocado, spinach, alfalfa sprouts, dill, liquid aminos, and pepper. With the machine running, gradually add the vegetable stock and process until smooth. Transfer the borscht to a bowl, cover, and refrigerate until chilled, at least 2 hours. Serve the soup in individual bowls, garnishing each one with alfalfa sprouts. 1(14 ounce) can sweetened condensed milk
1 (16 1/2 ounce) can cherry pie filling
1 cup miniature marshmallows
1 cup shredded coconut
1 cup chopped pecans
1 cup pineapple chunks
1 large container Cool Whip, thawed

Mix all ingredients together. Refrigerate overnight.

Yields 25 servings.

      6 Eggs

      1 tb Light mayonnaise

      2 ts Dijon mustard

      1/4 ts Dry mustard

      2 ts Fresh dill,chopped

      1/8 ts Freshly ground black pepper

      2 Whole wheat pita pockets OR

      4 Slices of whole wheat bread

      Boil the eggs for 5 minutes; run them under cold water and peel. Separate the whites from the yolks and discard the yolks. Chop the whites, combine them with the other ingredients and serve on whole wheat bread or in pita pockets. One ounce serving equals a half cup (4 ounces) of egg salad in one whole wheat pita or two slices of whole wheat bread. Per serving: 299 calories, 19 grams of protein, 48 grams of carbohydrate, 566 milligrams of sodium, 4 grams of fat (13 percent of calories).

      2 (16 ounce) bags of any frozen fruit
      1 (18.25 ounce) box yellow cake mix
      1 (12 ounce) can diet Sprite or diet 7-Up

      Place both bags of frozen fruit into a 13 x 9-inch baking dish (do not thaw). Sprinkle DRY cake mix over the top of frozen fruit. Pour entire can of diet Sprite or diet 7-UP over mixture. Cover with foil and bake 20 minutes at 350 degrees F. Uncover and bake an additional 40 minutes.

      Yields 12 servings.

      4 md Potatoes

      8 c Water

      1/2 ts Pepper

      1/2 lb Garlic Sausage

      2 tb Vegetable Oil

      1 t Salt

      2 lb Fresh kale

      Garlic Sausage should be the smoked kind, cooked and sliced. Peel and chop potatoes. Combine with vegetable oil and water. Cook for 20 to 30 minutes or until potatoes are tender. Remove potatoes and reserve liquid. Mash potatoes through a sieve and return to potato liquid. Add salt and pepper and simmer for 20 minutes. Wash kale discarding all tough leaves and cut into shreds. Add to potatoes and cook for 25 minutes. Add sausage. Simmer gently for 5 minutes.       4 pork chops,1 inch thick
      2 garlic cloves
      1 tablespoon ground coriander
      1 tablespoon coarsely ground black pepper
      1 tablespoon Brown Sugar Twin
      3 tablespoons soy sauce

      Combine all ingredients in a self-sealing bag; seal bag and marinate for 30 minutes.

      Prepare medium-hot coal bed. Remove pork from marinade, discarding marinade, and grill chops over direct heat for 12 to 15 minutes, turning once.

      Tofu Dip

      Round of whole grain bread
      8 ounces cream cheese
      2 tablespoons Parmesan cheese
      1 package extra firm silken tofu
      Salt and pepper to taste
      1 cup fresh or frozen spinach, cooked and well drained
      1 medium red onion, chopped or 1/4 cup salsa
      1 tomato, finely chopped
      Dried or fresh chives (for garnish)

      Place cream cheese, Parmesan cheese, tofu, salt and pepper  in a blender and blend until smooth.

      Fold in spinach. Add onion and tomato or salsa.

      Cut out a hole into the top of the bread large enough to pour the dip into. The dip can also be poured into a dish if bread is unavailable. Add a sprinkle of chives on top of dip. Let cool one hour or so.

      Serve with fresh sliced vegetables, the top of the bread cut into pieces, and/or your favorite whole grain cracker.
